The Repsol Guide presented this week the list of Soletes with Solera, a distinction that honors the tradition of classic businesses that have withstood the passage of time as the impetus of the younger generation who have decided to bet on the authentic. In total, 300 new badges of this type have been distributed throughout Spain, 5 of them in Tarragona.
The purpose of this award is to put the spotlight on young chefs who open new traditional food houses or who restore old bars in the center of cities. “Eating houses with roots, bars that could tell thousands of stories or families that have passed the trade down from grandparents to parents and from parents to children until it becomes an institution”, they explain from the organization. In addition, the list also includes lifelong bars that focus on the historical recipes of Spanish cuisine.
“We want to celebrate those who have remained faithful to the flavors in which several generations are recognized. These Soletes with Solera share a common philosophy that is nourished by the environment and the heritage received, so prevalent in small towns and cities and that in recent times has spread this root to the big cities and some of which are launching their businesses”, explained María Ritter, director of Guia Repsol.
